Are there any current or future uses for the "apparently" unused fields Email and Description in the User tab?
Same question for the Description field in the Root Folder tab.
Can I safely use these fields to store customer information?

Description fields are actually used in the administration page, when you hover on a user or root folder in the list, the description will be displayed. However you may use it for storing customer information. Email field is reserved for "send file via email" or "user sign-up" features that should be added in future versions.
